The table is laid at dusk and holds until three.
White linen on Alsancak, a meze counter by the door, and a fasıl that rises as the evening goes. Dinner here isn't a meal; it's a night.
What you pick from the meze counter sets the tone for the evening, which is why nobody hurries you through it.
An evening in four acts
A meyhane table has its own order. Plates land in the middle and the sequence holds.
-
01
Sakız oil and bread
It arrives before you ask: a plate of sakiz-oil dishes and warm bread.
-
02
The mezes
Chosen from the counter. Girit meze, haydari, samphire — as many plates as there are people.
-
03
The hot plates
Sesame-crusted tulum cheese, pan-fried liver, calamari. This is where the rakı starts.
-
04
Main and dessert
Adana or sweetbreads from the grill, then dessert — by which time the fasıl is at full volume.

You read the counter before you read the menu
This is the etiquette: you walk to the meze counter first, choose with your eyes, and the plates follow you to the table. Whatever there is, it's behind the glass — no menu needed.
What's in it changes with the season, so no two evenings are the same.

“We went for the set menu — generous. The Girit meze in particular was lovely.”
